Ingredients

1/4 cup balsamic vinegar
1 tbsp chopped fresh thyme
1 tbsp extra virgin olive oil
1 tsp dijon mustard
1/4 tsp salt
2 cups sugar snap peas
1 cup halved baby carrots
2 tomatoes, seeded and chopped
1 celery stalk, chopped
1/2 cup chopped red onion
6 ounces reduced fat sharp cheddar cheese cut into chunks
3 cups mesclun
Directions
Whisk together the vinegar, thyme, oil, mustard, and salt in a large bowl. Stir in the peas, carrots, tomatoes, celery, onion, and cheese. Arrange the mesclun on a platter and top with the vegetable mixture.
