Chunky Cheese Spaghetti

Introduction

A delicious mixture of chicken, cheese, veggies, spaghetti sauce and spaghetti. A meal in itself. Very simple to make and takes less than 30 minutes. A delicious mixture of chicken, cheese, veggies, spaghetti sauce and spaghetti. A meal in itself. Very simple to make and takes less than 30 minutes.

Ingredients

    4 Boneless Skinless chicken Breast Halves (1.25 lbs)
    2 Tblsp. Olive Oil
    1 lb. Zucchini cut in half lengthwise then into 1/2 in. slices
    1 Large Green Bell Pepper,chopped
    1 Large Red Bell Pepper, chopped
    3 oz. mushrooms, halved (or small can sliced mushrms)
    1/2 c. Chopped Onion
    1 Garlic Clove, minced
    26 oz. Spaghetti Sauce
    2 c. Part Skim Mozzarella Cheese, shredded
    8 oz Spaghetti, cooked, drained
    2 Tblsp chopped fresh Italian Parsley

Directions

Cook chicken in oil in large skillet until no longer pink (approx. 5 mins). Remove chicken from pan; drain all but 1 tablespoon oil. Add zucchini, bell peppers, mushrooms, onion and garlic to skillet. Cook and stir over medium high heat until crisp-tender. Add chicken and spaghetti sauce. Cook until thoroughly heated. Add 1 cup of cheese. Cook and stir just until cheese melts. Pour cause over cooked spaghetti, sprinkle with remaining 1 cup cheese and parsley.
