Introduction

This crock pot dinner is fantastic for fall, when most of the ingredients are in season. This crock pot dinner is fantastic for fall, when most of the ingredients are in season.
Number of Servings: 6

Ingredients

    1Tbsp canola oil
    2 red onions, finely chopped
    1 lb boneless chicken breast, cut into 1" pieces (about 2 breasts)
    1 apple, peeled, cored, and chopped
    1 carrot, peeled and chopped
    1 parsnip, peeled and chopped
    1 red bell pepper, chopped
    1 large sweet potato, peeled and cut into 1" pieces
    1 large tomato, chopped
    1 can (15oz) chickpeas, drained.
    1 tsp orange zest
    2 cups reduced-sodium chicken broth
    1 tsp ground cumin
    1/2 tsp dried basil
    1/2 tsp ground cinnamon

Directions

1) Place all ingredients in 4-quart or larger slow cooker. Stir to combine.
2) Cover. Cook on low 5-6 hours or on high 3-4 hours, or until
vegetables are tender.
