Ingredients
-
flour tortillas
3 boneless pork chops cut into thin slices
1 cup fresh pineapple cut into small cubes
1 green bell pepper sliced
1/2 onion sliced
lemon juice
lime juice
cumin
chili powder
oregano
basil
If you want some heat add red pepper flakes or cayenne or fresh jalapeno
.
Directions
Put the pork in the pan and throw in all the spices along with the lemon and lime juice and the pineapple chunks. Cook until the pork is almost done. Throw in the bell peppers and onion at the end so they stay crisp. Cook until pork is done.
Melt whatever type of cheese you prefer in a tortilla so that the tortilla gets some crisp to it as well.
Layer the tortilla with the pork and pineapple mixture, fresh guacamole and tomatos. If you did not add the cayenne or jalapenos when cooking then now is a good time for some hot sauce.
