Chicken Tortellini Soup

Introduction

Ingredients

    12 oz. skinless, boneless checken breast halves
    2 tsp. olive oil
    3 cloves garlic, minced
    2 (14-ounce each) reduced sodium chicken broth
    3 cups fresh mushrooms, sliced
    1-3/4 cup water
    2 med. carrots, cut into bite-size strips (1 cup)
    2 cups packed torn fresh spinach
    1 tsp. dried tarragon, crushed
    1 (9-ounce) package refrigerated cheese-filled tortellini

Directions

Cut chicken into 1/4-inch pieces. In Dutch oven heat oil over medium-high heat : cook and stir chicken and garlic in hot oil for 5 to 6 minutes or until chicken is no longer pink. Stir in broth, mushrooms, water, carrots and tarragon.
Bring mixture to boiling: reduce heat, cover and simmer for 2 minutes. Add tortellini, cover and simmer for 5 to 6 minutes more or until tortellini is tender. Stir in spinach.
