One Pot Spaghetti

Ingredients

    1 # ex-lean gr. beef or subst.
    1.5 Tblsp. olive oil
    1 can mushrooms
    1.5 c. diced tomatoes
    2 c. tomato sauce
    2 c. water
    16 oz. whole wheat thin spaghetti.
    1 tsp. salt
    1 pkg. dry Alfredo sauce mix

Directions

Makes 8 - 1.5 cup servings, approx.
Brown meat in olive oil until no longer pink. Add mushrooms, and sauce mix. Stir until well blended. Add all liquid. Bring to boil. Break pasta in half and add to sauce. Stir until well blended. Turn heat to maintain slow simmer. Cover and stir every couple of minutes for another 10 min. Turn off heat, cover, let sit for 5 min. Stir and let rest for 10 min. or longer. May serve or reheat later.
