Atkins Cheesecake

Number of Servings: 12

Ingredients

    450g Full fat soft (cream) cheese at room temperature
    3 eggs
    230g Creme Fraiche or soured cream
    scraped seeds from 1/2 Vanilla pod
    8 Tablespoons sugar substitute

Directions

Preheat oven to 180 C (gas 4)
Oplace all ingredients in a blender and blend for q5 minutes. Pour mixture in a 23cm springform tin. Eclose bottom and sides of tin a single piece aluminium foil to prevent leaking. Place in a pan of hot water in oven, if water evaporates during baking add more hot water. Bake for 1 hour and leave cake in oven 1 hour more
