Unfried Chicken Breast

Ingredients

2 cups of Whole Wheat Panko
1 cup whole wheat flour
4 egg whites
Salt & Pepper to taste
Non stick spray
Directions
Heat oven to 450 degrees and prepared a cookie sheet with a lining of foil. spray it with non stick spray set a side.
On 2 dinner plate put flour on one and Panko on another in another bowl put eggs and slightly beat them. Take dried chicken breast 4oz each and salt and pepper to taste on both sides. Then dredge chicken one at a time first in whole wheat flour on both side and shake excess off then place it in the egg mixture and then in the Panko pressing it so it coat its evenly on both side. Place chicken on cookie sheet and when all are done salt and pepper again to taste. Take cooking spray and spray lightly over chicken. Place chicken in over for 25 to 30 mins until golden brown. Let the chicken rest for 15 mins before cutting into it and then serve. Feed 4 4oz pieces . Add butternut squash and a veg and you are all set.
