Roasted Autumn Fruit

Introduction

Adapted closely from a Martha Stewart recipe that is yummy and low-cal. Adapted closely from a Martha Stewart recipe that is yummy and low-cal.
Number of Servings: 4

Ingredients

    2 peaches
    2 plums
    2 nectarines
    2 Tablespoons sugar
    2 Tablespoons unsalted butter cut into pieces
    About 1 Tablespoon lime juice
    About 1 Tablespoon fresh rosemary

Directions

Preheat the oven to 400 degrees Fahrenheit. Prick the skins of the fruit with a fork. Quarter and pit the fruit.

In a roasting pan toss the fruit with the rosemary, lime juice, sugar and butter. Roast for 15-20 minutes until the fruit is fork tender.

Serve warm with frozen yogurt or lite whipped cream.

Serves 4.
