* Chicken Breast, 4 breast, bone and skin removed
* Green Peppers (bell peppers), 1 large
* *Peppers, sweet, red, fresh, 1 large
* Onions, raw, 1 large
* Salt, 1 tsp
* Pepper, black, 1 tsp
* *Extra Virgin Olive Oil, 1 tbsp
* Hunt's Diced Tomatoes, 28 oz can
* Oregano, ground, 1 tsp
*Thyme, ground, 1 tsp
*Basil, 1 tsp
*Lemon juice, 2 tbsp
Preheat oven to 375 degrees.
Heat extra virgin olive oil over medium heat.
Salt and Pepper one side of each chicken breast, place in oil.
Brown one side of each chicken breast.
Place chicken brown side up in sprayed 2 quart casserole dish.
In remaining oil, sautee peppers and onion.
Add diced tomatoes, lemon juice, and spices.
Pour mixture on top of chicken breasts.
Bake at 375 degrees for half an hour or until chicken is done.
Add parmesan cheese as a garnish. (not included in nutrition info)
