Beefy Vegan Chili

Ingredients

    1 can Great Northern Beans
    1 small can tomato sauce (8 oz)
    1.33 cups (2 servings) of Quorn Grounds
    1.5 cups of low sodium vegetable broth
    1/2 onion
    2 cloves of garlic
    2 tsp olive oil
    1 tbsp chili powder
    1.5 tsp cumin powder
    0.25 tsp cardamom
    1.5 tsp liquid smoke
    0.5 tsp ground cayenne pepper (optional)

Directions

Dice the onion and garlic.

Add the onion and garlic to a large pot with olive oil over medium high heat and cook until the onion becomes translucent.

Add frozen Quorn grounds and sauté for approximately 5 minutes or until they have thawed.

Add tomato sauce and broth to the pot.

Rinse the Great Northern beans and add half of the can to the pot. Reserve the other half in a small bowl.

Add in spices and bring to a boil.

Reduce heat to medium-low.

With a fork, smash the reserved Great Northern beans to thicken the chili and add to pot.

Let the pot simmer for about 20 minutes or until desired consistency is reached.

Makes two 1.75 cup servings
