London Particular (Pea Soup)

Introduction

'London Particular' is an old English name for Yellow Split Pea Soup, it was named after the thick blankets of yellow fog or ‘peasoupers’ that used to engulf London in the 19th century. Ingredients

    4 Meat Free Hot Dog Sausages (chopped roughly)
    300g Onions
    300g Carrots
    2 ltrs of stock (3 Vegetable Stock Cube+15 g Marmite)
    350g Yellow Split Peas
    Stalk of Celery

Directions

** Bring stock just up to simmering point, then add the split peas, stir well and simmer very gently for about 30 minutes

**Saute onion, then add hot dogs along with the prepared vegetables and cook them over a medium heat until softened and nicely golden – this will take about 15 minutes. Then add to the stock and split peas. Season with some salt and freshly milled pepper, put the lid on and simmer very gently for a further 40-50 minutes.

**When the soup is ready, either process it in a food processor or liquidise, then return it to the saucepan, reheat as needed.
