Turkey-Rice Stuffed Squash

Ingredients

    - 2 acorn or butternut squash (~1 1/2 lbs.)
    - 1/2 lb. ground turkey (uncooked)
    - 1/4 c. carrots, chopped or shredded
    - 1 c. zucchini, chopped
    - 1/4 onion, chopped
    - 1/2 tsp. salt
    - 1/2 tsp. rubbed sage
    - 1/4 tsp. black pepper
    - 1/2 tsp. marjoram
    - 1/2 c. shredded mozzarella cheese
    - 1/2 c. hot cooked brown rice

Directions

(1) Pierce each squash several times and place on paper towels in microwave. Cook on high 6-8 minutes or until slightly tender. Cut in 1/2 lengthwise; discard seeds and membranes.

(2) Place halves (cut side down) in 13x9x2 glass pan. Cover with plastic wrap and microwave on high for 7-8 minutes.

(3) Place carrots and turkey in 1.5 qt. baking dish and microwave on high for 3 minutes (stir at 1.5 min). Add next 6 ingredients and stir well. Microwave on high for 2-3 minutes. Stir in cheese and rice.

(4) Spoon 1/2 c. mixture into each squash half. Microwave on high 2 minutes or until cheese melts.

Serves 4 (generous portions).
