Slow Cooked Sweet Bison Stew

Introduction

Ingredients

    1 pound organic bison, ground
    1 tbsp olive oil, lemon
    1/4 cup pino grigio wine
    1 tablespoon corn starch
    1 cup organic beef broth
    2 cups sweet potato diced (without skin)
    1 cup celery, diced
    1 medium yellow onion
    1 medium apple
    1 tablespoon
    2 bay leafs, whole
    1 tablespoon basil

Directions

Brown bison meat in 1 tablespoon lemon olive oil. I get my lemon olive oil from Queen Creek Olive Mill, but you can find lemon olive oil at most healthy or whole foods type stores. Move meat but not juices to slow cooker. Deglaze pan with 1/4 cup pino grigio. Mix 1 tablespoon corn starch into 1 cup water until mixed well then add to juices and pour all liquid into slow cooker. Add basil and 2 bay leaves and stir.

Chop fruits and vegetables into approximately 1/2 inch chunks. Add all but apple to slow cooker and stir. Cook on high 1 hour or low until meat is cooked through and tender, then add apple and cook on low for 1/2 hour.

Remove bay leaves, and serve.
