Introduction

Adding a parmesan cheese rind to the broth while it simmers imparts that unique italian taste that I associate with "Minestrone" as opposed to just plain soup. Number of Servings: 4

Ingredients

    1 cup chopped onion
    1 cup chopped celery
    1 large clove garlic pressed
    1 cup chopped carrots
    1 cup chopped fresh green beans
    1 cup chopped green cabbage
    3 cups chopped greens (Beet, kale, chard or similar)
    1 cup canned kidney beans
    1 cup uncooked whole wheat pasta
    2 qts vegetable broth
    parmesan cheese rind (optional)

Directions

Sauté onions, celery and garlic in olive oil. Add broth, carrots, and parmesan rind and simmer for an hour or so. Add green beans, cabbage, greens, kidney beans and pasta. Cook until pasta is tender. Remove rind and serve.
