Introduction

A skillet saute of corn, beans, and squash. I served it with baked salmon and a white-and-wild rice mixture. It can be vegetarian if one omits the pat of butter. Ingredients

    8 ounces diced zucchini
    4 ounces cut green beans, fresh or frozen
    5 ounces corn kernels, fresh or frozen
    1/4 cup chopped onion
    1 tablespoon vegetable oil
    1 pat butter, about 10 grams (optional)
    1/2 tsp salt
    1/4 tsp pepper

Directions

Heat oil in heavy skillet, and add chopped onion. Saute over medium heat until golden and fragrant, then add the other vegetables and seasonings. Stir for a few minutes until all vegetables are coated thinly with oil. Add the water and cover for about 5 minutes to thaw and cook the frozen corn and beans. Remove cover, and raise heat slightly, and allow vegetables to heat until water has evaporated and the corn is slightly browned. Add pat of butter if desired. Makes 3 5-ounce servings.
