This spicy treat is packed full of protein and is a great start to your morning. Try a whole grain tortilla instead of the flour tortilla for a high fiber option! Ingredients

    8 Large Eggs
    One Green Bell Pepper
    One Red Bell Pepper
    One Medium onion
    4 slices Sargentos Reduced Fat Pepper Jack Cheese.
    8 Flour Tortilla Shells
    Picante Sauce (2 TBSP per Burrito)

Directions

Scramble 8 large eggs using minimal cooking spray to prevent sticking
Sautay chopped Green Bell Peppers, Red Bell Peppers, Onions.
Mix together with eggs and melt Pepper Jack Cheese over.

Place 8 equal servings of egg, pepper, and cheese mixture on the tortillas, wrap and serve with Picante sauce on the side!
