Whole Wheat Pumpkin Muffins

Introduction

These freeze beautifully, so I keep them on hand for quick breakfasts. These freeze beautifully, so I keep them on hand for quick breakfasts.
Number of Servings: 24

Ingredients

    1 stick butter, melted
    1 15-ounce can pure pumpkin
    1/2 cup applesauce
    4 eggs
    2/3 cup water
    3 1/2 cups whole wheat flour
    3 cups light brown sugar
    2 tsp baking soda
    1 tsp salt
    2 tsp pie spice
    1 tsp vanilla extract

Directions

Makes 24 servings.

1. Combine wet ingredients in a medium bowl.
2. Combine dry ingredients in a large bowl.
3. Add wet ingredients to dry ingredients. Stir just until mixed.
4. Bake 25 minutes at 350 degrees.
