Chocolate Chip Sweet Potato Pie

Introduction

ONLY TO BE ENJOYED IN MODERATION (that note is mostly for me). This is a delicious adaptation of the ubiquitious Sweet Potato Pie! I love it and I am sure you will too! Number of Servings: 16

Ingredients

    2 40oz cans of Sweet Potatoes drained
    1 12oz can Evaporated Milk
    1/2 cup light brown sugar
    1 14oz can Sweetened Condensed Milk
    2 9" Pie Crusts
    4 servings Ghirardelli 60% Cacao Bittersweet Chocolate Chips
    2 tsp Cinnamon
    1 tsp Ginger
    .5 tsp allspice (I like Jamaican Allspice)
    4 Large Eggs

Directions

Preheat oven to 425
Drain and mash Sweet Potatoes
Mix in eggs, evaporated milk, sweetened condensed milk, brown sugar, chocolate chips, and spices (Use a mixer to get them well blended)
Place each pie crust in a deep dish pie pan (quantity 2)
Pour even amounts of mixture into each pie pan
Bake at 425 for about 15 minutes
Then change oven temp to 350 and bake for another 45 - 55 minutes

This makes two pies with 8 servings each for a total of 16 servings!
