Garlic Dill Meatballs

Introduction

(from the Dr. Atkins' Quick and Easy new Diet cookbook, but modified to substitute ground turkey instead of ground chicken and pork). Ground Beef can be used as well. Ingredients

    1.5 lbs ground turkey
    1 small finely chopped onion
    1/2 cup ground pork rinds
    1 large egg
    2 minced garlic cloves
    2 TBSP fresh (or dried) chopped dill
    2 TBSP olive oil
    salt and pepper to taste

Directions

Preheat oven to 375*
Combine the ground turkey, onions, pork rinds (this takes the place of bread crumbs for a lower carb result), egg, garlic, dill, salt, and pepper in a bowl, and mix well. Divide mixture into 12 2" meatballs, or 24 1"meatballs.

Heat oil in a large ovenproof skillet over medium high heat, until hot, but not smoking. Brown the meatballs, turning them, about 6 minutes. Transfer the skillet to the oven and bake the meatballs, covered, 15 minutes. Serve immediately. (2 large meatballs per serving if making 12 total, or 4 smaller meatballs per person,if making 24).
