Kung Pao Pork

Ingredients

    0.66 pound lean pork, cut into 1/2" cubes
    1/4 cup soy sauce, divided
    1/4 cup water
    2 tablespoons sugar
    2 tablespoons lemon juice
    2 teaspoons cornstarch
    1/4 teaspoon dried crushed red pepper
    1 tablespoon sesame oil
    1 bag frozen "asian style" vegetables (16oz)
    1/2 small onion, cut into 1" pieces
    2 cloves garlic, minced
    1/4 cup chopped unsalted dry roasted peanuts
    2 cup cooked brown rice

Directions

Toss together pork and 2 T. soy sauce. Set aside. Stir together remaining 2 T. soy sauce, 1/4 cup water, and next 4 ingredients.

Stir-fry pork in hot oil in a wok or skillet over medium high heat 3 minutes or until lightly browned. Add vegetables, onion, and garlic.

Stir-fry 3 minutes or until vegetables are tender. Add soy sauce mixture and stir fry 2 to 3 minutes or until thickened. Stir in chopped peanuts and serve over rice.

Makes 4 servings: 1 cup pork mixture (estimated) over 1/2 cup rice.
