Potato Salad

Ingredients

    5 medium potatoes
    1/4 cup lite, cream french dressing
    1 cup chopped celery
    1/3 cup chopped sweet onions
    4 hard boiled eggs, sliced
    1/2 cup low-cal mayo
    2 tsps. yellow mustard
    1 tsp. celery seeds, optional

Directions

Scrub potatoes well. Cook potatoes with jackets on; cube when cool enough to handle. (peel if you like, I don't) Pour French dressing over warm potatoes. Chill for 2 hours.

Add celery, onions, eggs; mixing well but gently. In small bowl, whisk together mayo, mustard and celery. Add to potatoes and mixing well. Chill 4 hours.
