This is a recipe adapted from the allrecipes.com site. I needed something rather bland but tasty without meat for my husband who is getting over the stomach flu. Ingredients

    6 large eggs
    1 cup 1% milk
    1 tsp vanilla
    1 cup whole wheat flour
    3 Tbsp sugar
    1/4 tsp pumpkin pie spice
    1/2 tsp salt
    2 med apples, cored and sliced
    3 tbsp brown sugar

Directions

Blend eggs, sugar and milk in a large bowl. Mix flour, sugar, spice and salt in a small bowl. Add to wet ingredients and mix until just blended. Prepare 9-inch baking pan with cooking spray. Arrange apple slices in pan. Pour batter over apples and sprinkle with brown sugar. Bake 20 mins in a preheated 425 oven.
