Crockpot Pumpkin Pie Pudding

Introduction

I found this recipe online and it sounded so good I just had to try it. If you want more of a crust, you will need to increase the amount of Bisquick you add, this amount just helped thicken the pudding. Ingredients

    1 (15-oz) can pumpkin (not pie mix)
    1 (12-oz) can evaporated skim milk
    1 Tbsp pumpkin pie spice
    3 tsp vanilla
    2 lg eggs
    1/2 cup HeartSmart Bisquick

Directions

Mix all ingredients in a large bowl with a mixer until well blended. Spray crock of crockpot with cooking spray. Pour Mixture into crock, cover and cook on HIGH for 3 hours.
