Greek Style Chicken Pitas

Introduction

Ingredients

    Chicken:
    1-1/2 boneless, skinless chicken breasts
    1/4 cup mayonnaise with olive oil
    1/4 cup fat free Italian dressing

    Cucumber-Yogurt Sauce:
    1/2 cup non-fat plain Greek yogurt
    1/4 of a large cucumber, peeled, chopped
    1 Tablespoon onion, finely chopped
    1 Tablespoon parsley, chopped
    1/2 Teaspoon lemon juice
    1/4 Teaspoon garlic powder

    Condiments:
    1/2 Tomato diced
    1/4 Cup mozarella cheese

Directions

Chicken Preparation:
Rinse and pat dry chicken. Cut into bite size strips. Place in a plastic bag.

For marinade: Combine mayonnaise and salad dressing and pour over chicken. Let marinate in refrigerator in the bag overnight.

Cucumber-Yogurt Sauce:
In a small bowl, combine all ingredients. Transfer to a plastic bag. This can also be refrigerated overnight.

Cooking Instructions for Marinated Chicken:
Drain Chicken, discard marinade. Heat 1 tablespoon of olive oil in a skillet and saute chicken peices until the chicken is no longer pink.

Making the Pita Pockets:
Cut the pita breads in half cross-wise
Divide the chicken into the pita rounds, top with the cucumber-yogurt sauce, tomatoes and cheese.
