Cauliflower and Broccoli au Gratin

Took the original recipe for Cauliflower Kugel and used fresh veggies, fat free cheese and egg beaters, lowfat cottage cheese. Took the original recipe for Cauliflower Kugel and used fresh veggies, fat free cheese and egg beaters, lowfat cottage cheese.Number of Servings: 6
Ingredients

5 c fresh cauliflower, small pieces
2 c fresh broccoli, small pieces
1 c lowfat cottage cheese
1 1/2 c fat free cheddar cheese, shredded
1 med onion chopped and sauted
4 eggs
1/4 tsp pepper
1/2 tsp Mrs Dash
Directions
Saute onion in small skillet with Pam. Set aside and let cool.
Both broccoli and cauliflower need to be broken into small pieces. In large bowl mix together, eggs, cooled onions and 3/4 c cheddar cheese, and cottage cheese, beat it all together. Add broccoli and cauliflower stir together to coat completely.
In large baking pan (lasagna size) sprayed with pam. Put mixture. Sprinkle with remaining cheese. Cover with aluminum foil, cook for 30 minutes. Remove foil and cook another 15-30 minutes until desired doneness.
Makes 6 servings.
You can add meat to this of a one meal dish.
