Cheese Soup

Ingredients

Margarine - 2 1/2 oz
Onions, Finely Chopped - 2 1/2 oz
Flour, AP - 1/3 c
Cornstarch - 2 TBSP + 1/4 tsp
Paprika - 1/4 tsp
Salt - 2 tsp
Pepper, White - 1/4 tsp
Milk - 1qt + 1 c
Chicken Stock - 1 qt + 2 1/2 c
Carrots, Finely Chopped - 5oz
Celery, Finely Chopped - 4oz
Cheddar Cheese, Sharp, Shredded - 5oz
Directions
Makes 12 portions using an 8oz Ladle.
Melt margarine. Add onions and saute until tender.
Add flour and cornstarch mixture to onion mixture. Cook for 5 mins.
Blend paprika, salt, and pepper together. Add seasonings and blend.
Add milk and stock slowly, while stirring. Cook until thickened.
Cook carrots and celery in pot on range top until tender but slightly crisp. Add to soup.
Add cheese and stir until melted.
