Healthy Homemade Cream Of Mushroom Soup

Introduction

Eat plain or pour over extra lean beef patty, turkey patty, or chicken. Eat plain or pour over extra lean beef patty, turkey patty, or chicken.

Ingredients

    1 cup chopped or sliced mushrooms
    1 T. olive oil
    1 clove garlic
    1 T. flour
    1 T. unsalted butter
    1 1/2 cups veggie broth
    1/2 cup skim milk
    1/2 cup lite sour cream
    1 egg white

Directions

Saute' garlic, mushrooms in olive oil for 5 minutes on medium heat. Add flour and stir. Add vegetable broth. Bring to a boil. In a seperate bowl beat sour cream, milk, and egg white till blended. Add to broth and heat through on low heat for 10 minutes. Pour over pasta, extra lean beef, turkey patties or chicken. Enjoy!
