Middle Eastern Chicken Cacciatore

Ingredients

    4 Chicken Breasts
    1 tbsp. extra virgin olive oil
    3/4 cup onion, chopped
    1 cup celery, chopped
    1 cup carrots, chopped
    1/4 cup yellow peppers, chopped
    1/4 cup orange peppers, chopped
    2 tsp garlic, minced
    1 16oz. can chickpeas
    1 tbsp. garam masala
    1 tbsp. curry
    1 tbsp. cumin
    1 tsp. chili powder
    1 tsp. coriander
    2 cups chicken broth
    1 can pasta sauce
    1/2 tsp salt
    1/4 tsp pepper

Directions

Bake the chicken breasts in the oven at 375 degrees for 45 minutes. Remove and let cool.

Heat olive oil in a pot. Add onion and saute 3 minutes. Add celery and carrot. Sautee another 5 minutes. Add in peppes and garlic and mix. Add a splash of the chicken broth. Mix. Stir in the chickpeas Let cook for another 3 minutes. Stir in the next 5 ingredients.Let cook for another 3 minutes. Pour in the chicken broth and mix in the pasta sauce. Once combined, remove the skin from the chicken breasts and cut in half put in the pot. Mix together. Let simmer for 10 minutes. Serve with basmati rice.
