Introduction

These are just so good. The things I did different was use light soymilk and 3 egg whites instead of 2 whole eggs, and I used Splenda. These are just so good. The things I did different was use light soymilk and 3 egg whites instead of 2 whole eggs, and I used Splenda.

Ingredients

    2c Bob's Redmill Cornmeal
    2c whole wheat pastry flour
    1tsp salt
    8tsp baking powder
    2TB Splenda
    3 egg whites
    2c light vanilla soymilk
    1/4c unsalted butter

Directions

Preheat oven to 425 degrees. Sift together dry ingredients into a bowl. Add eggs, milk and butter, Beat until smooth, about one minute, Do not overbeat. Pour into sprayed muffin tin. Bake for about 15 minutes.
