White rice made with chicken broth and mirepoix veggies. Rice is very cheap but I can't stand it plain so I make a lot of variations on this with spices, veggies, brown rice, and different broths. Ingredients

2 cups chicken broth (I use 2 broth cubes and 2 cups of water)
1 cup white rice
3/4 cup Mirepoix blend or whatever frozen veggies you want. Mirepoix is diced onion, carrots, and celery or onion, green pepper, and celery.
Salt and/or pepper as you want. I don't add salt because the broth has a lot of it.
Directions
Saute Mirepoix in non stick pot. If not using a frozen veggie blend, then just saute onion and celery b/c the carrots will get a bit mushy otherwise. I don't like crunchy onion so I put up with the mushy carrots :)
Pour broth onto veggies and put in 1 cup uncooked rice. Cook per directions on the rice.
I based the NI on 4 half cup servings.
