My boss made these the other day and they were so delicious, I had to get the recipe and share it. You will notice that applesauce is used in place of butter. They were moist and super yummy! Ingredients

1 1/2 cups all purpose flour
3/4 cup sugar
3/4 cup chopped walnuts (about 3 oz)
1 1/2 teaspoon baking soda
1 1/4 cup mashed ripe bananas
1/2 cup applesauce (do not level off, it should be heaping)
1 egg
2 1/2 tablespoons milk
Directions
Preheat oven to 350 degrees F. Grease 12 1/2 cup muffin cups. Mix together flour, sugar, chopped walnuts, baking soda in a bowl. Combine bananas, applesauce, egg, and milk in another bowl. Add banana mixture to dry ingredients, mixing until just combined. Pour into cups. Bake about 25 minutes. Tak out and let cool. Makes 12 servings.
