Flax Bran Muffins (Bob's Red Mill adaptation)

Introduction

Number of Servings: 20

Ingredients

    1 1/2 c whole wheat flour
    3/4 c brown flaxmeal
    3/4 c oat bran
    1 c brown sugar
    2 t baking soda
    1 t baking powder
    1/2 t salt
    2 t cinnamon
    1 1/2 c shredded carrots
    2 apples, peeled and shredded
    3/4 c chopped walnuts
    1/4 c shredded unsweetened coconut
    2 beaten eggs
    1 t vanilla

Directions

makes 20 muffins

Preheat oven to 350 F. Place paper liners in muffin cups or spray.

Mix dry ingredients together in one bowl. In another bowl, mix wet ingredients together. Add brown sugar. Blend until
sugar is dissolved. Add grated carrots, apples and nuts to wet ingredients. Stir. Blend wet into dry with a few swift strokes, until just blended. Do not overmix or muffins will be tough.

Fill muffin cups 3/4 full and bake for 15-18 minutes. (fill empty cups 1/2 full with water)
