IntroductionApple, pumpkin, walnuts, cinnamon....mmmmm...FALL. Apple, pumpkin, walnuts, cinnamon....mmmmm...FALL.
1 sm. can pumpkin (15 oz. NOT pie filling)
1 cup peeled, shredded apple (approx. 1 lg. apple)
1/2 c. brown sugar
1 c. sugar
2 1/4 c. whole wheat flour
1 Tbsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1/2 c. walnuts
*1/2 c. raisins or chopped dates (optional - not factored in)
- parchment or wax paper
Mix first 5 ingredients in a bowl. Add the other indredients gradually and mix until well blended. Sppon batter equally into loaf pans and bake at 350 degrees for 45-50 minutes. Bread is done when a knife inserted at the highest point comes out clean. Cool in pan for about 10 minutes before removing.
Makes 2 loaves of approx. 12 servings each.
