Carrot Salad

Number of Servings: 8

Ingredients

    2 c grated carrots
    2 tbsp lemon or lime juice
    1 tbsp honey
    1/4 tsp crushed red pepper

Directions

Combine all ingredients in a large bowl. Mix well, press lightly with wooden spoon until somewhat juicy.

Can be served chilled or at room temperature.

Makes approx 6-8 servings, depending on how much you like carrots!
