3 tbsp Lime juice 3 cup Instant brown rice 3/8 Large red tomato 1/4 Large onion
Cut tomato into eighths, removing seeds and wet insides. Make rice as directed, using lime juice in stead of some of the water. Stir onion and half of tomato into rice while it cooks. Add second half of tomato when rice is done, serve hot or cold.
