Snickerdoodle Cookies

Introduction

Number of Servings: 36

Ingredients

    1 cup butter
    2 cup sugar
    1/2 tsp. baking soda
    1/2 tsp. cream of tartar
    2 eggs
    1 tsp. vanilla
    3 cups flour
    2 tablespoons sugar
    1 tsp ground cinnamon

Directions

In a medium mixing bowl beat the butter wiwth an electric mixer on medium to high speed for 30 seconds. Add the 2 cups sugar, baking soda, and cream of tartar. Beat until combined, scraping sides of bowl occsionally. Beat in as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaining flour. Cover and chill for 1 hour.

Combine the 2 tablespoons sugar and the cinnamon. Shape dough into 1 1/2 inch balls. I use a 1.5 inch cookie scoop. Roll balls in sugar-cinnamon mixture to coat. Place balls 2 inches aprat on an ungreased cookie sheet.

Bake in a 375 degree F oven for 10 to 11 minutes or until edges are golden. Transfer cookies to a wire rack and let cool.
