Beef Stroganoff Russian style

Introduction

Ingredients

    1.5 pounds of top sirloin or tenderloin beef
    1 tsp salt
    1 tsp black pepper
    3 tbsp butter or margarine
    1 tbsp all purpose flour
    1 c beef bouillon
    1 tsp hot prepared mustard
    2 small onions, sliced
    3 tbsp sour cream at room temperature

Directions

Trim beef and cut into narrow strips 2 in. long and 1/4 in. thick. Sprinkle with salt & pepper.
Melt 1/5 tbsp butter and add flour. Stir in bouillon and bring to a boil. Stir in the mustard. Cook, stirring constantly until thick & smooth.
In skillet heat remaining butter until very hot. Brown meat and onions quickly on all sides.
Add sour cream to mustard sauce & bring to a boil. Add meat and onions to sauce.
If using tenderloin, can serve immediately. If using less tender meat, put in the top of a double boiler for 20 minutes. When tender, return to direct heat for about 3 minutes, stirring constantly.
Serve with buttered noodles & a green vegetable.
Makes 4 servings. Keeps and reheats well.
