Chicken Tortilla Soup

Introduction

This isn't very "diet" food. However... it tastes amazing and is great when you can plan it into your day.
This makes A LOT. Prepare to put some in the freezer to save for another day.

Number of Servings: 8

Ingredients

    3 cans chicken broth
    3 C Half & Half
    1 can cream of chicken soup
    1 lb chicken breast (boiled & shredded)
    1 C salsa
    Bunch of Cilantro
    3 T chili powder
    1.5 T cumin
    1 Pkt Fajita seasoning
    2 T flour
    1/2 stick butter
    1 whole onion
    4 cloves minced garlic
    1 can black beans
    1 C frozen corn

    (Following Items are not included in nutritional info, but can be added for flavor to the top of a bowl of soup)
    Shredded Cheddar or Mexican cheese
    Sour Cream
    Chopped Green Onion
    Tortilla Chips

Directions

Melt butter with garlic and onion until just soft. Add flour until moist. Add chicken broth and half and half. Mix well, bring to a boil.

Add remaining ingredients. Turn down heat and cook for at least 15 minutes.
Serve with chips and toppings.
