Sante Fe Soup

Introduction

Wonderful soup with a Tex-Mex twist. Very tasty and makes a lot! Wonderful soup with a Tex-Mex twist. Very tasty and makes a lot!
Number of Servings: 16

Ingredients

    2 lb. - lean ground beef
    1 - large onion, chopped
    2 - 1 oz pkgs Ranch dressing mix
    2 - 1.25 oz taco seasoning mix
    2 - 11 oz cans shoe peg white corn, drained
    2 - cups water
    1 - 16 oz black beans, undrained
    1 - 16 oz pinto beans, undrained
    1 - 16 oz red kidney beans, undrained
    1 - 14.5 oz whole tomatoes
    1 - 10 oz diced tomatoes and green chiles

Directions

Chop onion and saute onion until translucent. Brown ground beef, drain. Combine all ingredients in crockpot and cook over low for several hours, stirring occasionally. Top with sour cream and grated cheese, if desired. Serve with chips or cornbread for a great meal!

Makes 16 one-cup servings.
