These are super easy and taste just like delicious moist cakey brownies. The only catch is, they're made of beans. No one would ever guess the flour has been switched out.
1 can black beans, rinsed and drained
4 large eggs
1/4 cup plain low fat yogurt
1 tbsp vanilla extract
3 tbsp olive oil
3 tbsp cocoa powder
1 tsp baking powder
1/2 tsp baking soda
3/4 cup Whey Low sugar substitute (or Splenda which will make the calories 114)
1 box Jello Sugar-Free Chocolate Pudding mix
Set oven to 350 degrees Fahrenheit
Put cupcake liners in muffin pan
In blender, blend all wet ingredients plus the cocoa powder until smooth. Add all remaining dry ingredients except pudding mix and blend until smooth. Add pudding mix and blend. It may be necessary to mix it in by hand.
Distribute the mixture into 12 muffin cups with liners. Bake between 21 and 25 minutes depending on the individual oven. Cool and enjoy.
