Cassoulet with Butternut Squash, Chicken, Sausage

Introduction

Number of Servings: 8

Ingredients

    1/2 T Butter
    2 C chopped onion, divided
    3 cloves garlic, pressed or chopped
    1 C apple juice, cider, or white wine (calorie count is with cider)
    2 T Italian parsley, chopped
    1/2 tsp salt
    1/2 tsp dried thyme
    1/2 tsp dried basil
    3/4 tsp pepper
    14 oz canned tomatoes, good with basil or Italian seasoning
    2 C water
    2 C peeled, seeded butternut squash
    1 C carrots
    30 oz can drained Great Northern Beans
    3 slices cooked bacon, crumbled
    1 lb chicken breasts, cut into pieces, or leftover precooked
    1/2 lb smoked turkey sausage or Keilbasa


Directions

Melt butter, saute onions and garlic. Add 1/2 C apple juice, spices, tomatoes and bring to a boil. Reduce heat and simmer 10 min. Transfer to a bowl and set aside.

In a large pot add water, carrots, and squash. Bring to a boil, reduce heat and simmer 30 min. Add onion/tomato mixture and beans to the beggies in the pot and cook over low heat for another 30 min.

Meanwhile, cook bacon, chicken with remaining C onions), and sausage. Add meat to squash mixture, add the second 1/2 C apple juice or wine. Bake at 350 covered 1 hour, then uncovered 30 min more.
