Pure Potato Leek Soup

Introduction

Ingredients



    * Leeks, 3 leek (remove)
    * *Potato, raw, 12 small (1-3/4" to 2-1/2" dia.) (remove)
    * Cauliflower, cooked, 2 cup (1" pieces) (remove)
    * Milk, 1%, .25 cup (remove)
    * Water, tap, 12 cup (8 fl oz) (remove)

Directions

Boil leeks and potatoes until mushy, blend with stick blender, add mashed cauliflower and salt to taste.

Pepper, yogurt and mint are good garnishes.
