Pre-Diet Meatloaf

Introduction

I had this in the freezer from a month ago, right before I started SP. It's not too bad, but I had to really scale the serving size back! I usually make this into two smaller loaves, rather than one large. Cooking time given is for one loaf. Cut each smaller loaf into 8 slices for individual (small) servings. Ingredients

    1 lb. lean ground beef (90/10)
    1 lb. ground pork
    1 lb. ground turkey
    2 eggs
    2/3 c. nonfat milk
    2/3 c. oats (not instant)
    3 T. dried onion flakes
    1 T. parsley
    1/2 T. salt
    1 t. pepper
    1/2 c. whole wheat breadcrumbs
    1 green bell pepper, diced
    1/4 c. apple cider vinegar
    2 T. brown sugar, packed
    2/3 c. ketchup

Directions

Mix first 12 ingredients. Form loaf in a pan sprayed with nonstick cooking spray. Mix last three ingredients; pour over loaf. Bake at 350 degrees for 2 hours. Cool 5 minutes before slicing.
