Introduction

A wonderful light salad A wonderful light salad
Number of Servings: 10

Ingredients

    2 cups of couscous cooked
    3 bunches of parsley chopped
    1small bunch of fresh mint chopped
    1 green onion chopped
    1/4 cup red onion chopped
    3/4 cup olive oil
    3-4 lemons, juice only
    salt to taste

    Optional: pine nuts, apricots, any vegetables

Directions

Add two cups of dry couscous to 2 cups of hot water. Cover and set aside until ready. Chop, combine other ingredients, chill and serve.
