Tortilla Soup

Introduction

This is a wonderful way to use up your extra roast chicken, using the broth you've made from it's bones. This is a wonderful way to use up your extra roast chicken, using the broth you've made from it's bones.
Number of Servings: 5

Ingredients


    Chicken Broth
    Beef Broth
    Delmonte Stewed Tomatoes (pureed)
    Green Bell Pepper
    Bird's eye frozen corn
    Vidalia or yellow onion
    Roast chicken, cut up
    Cumin
    Chili powder
    Oregano
    Fresh cilantro
    Tostinos Multigrain Tortilla Chips
    Cabot extra sharp cheddar cheese

Directions

This makes around 5 servings

I use broth made from bones, from a leftover roast chicken. Heat chicken broth, add beef broth ~ add bouillon cubes, if needed.

Add raw veggies & simmer until soft.

Add Cumin, Chili powder, & Oregano , add Pureed Stewed Tomatoes.

Snip some cilantro into soup when done.
Crumble tortilla chips in a bowl, pour soup over , grate some cheddar cheese over the top & garnish with a few slices of avocado.

Enjoy!
