Chicken & Rice

Number of Servings: 6

Ingredients

    4 Chicken Leg Quarters)
    1 C White Rice, long grain
    1/8 C Wild Rice
    3 tbsp Onions, dehydrated flakes
    1 tsp Garlic
    3/4 C Peas, frozen
    1 C Mushrooms, fresh sliced
    1.5 TBS Parmesan Cheese, grated,
    2 C Chicken Broth 99% Fat Free

Directions

Preheat oven to 350F. Spray sheet-cake pan.

Into pan measure all dry ingredients except Parmesan and stir distribute all items evenly. Place leg quarters on top of rice mixture.

Pour Chicken broth over leg quarters, then sprinkle parmesan cheese over the legs. Loosely tent baking pan with foil.

Bake for about an hour, remove foil and continue for 20 more minutes or until fork tender and browned.
