Submitted by: MEL_UNRAU

Introduction

Easy Beans and Rice! This isn't a leave the house recipe, because you have to come back to it and add stuff, but wonderful for a rainy Saturday. Easy Beans and Rice! This isn't a leave the house recipe, because you have to come back to it and add stuff, but wonderful for a rainy Saturday.

Ingredients

    * Brown Rice (uncooked), 1 cup
    * Del Monte Petite Cut Diced Tomatoes, 1.5 cup
    * Beans, red kidney, 1.5 cup
    * Green Peppers 0.75 cup, chopped
    * Lawry's Taco Seasoning, 10 tsp
    * Water, tap, 2 cup

Directions

I kind of do this one by sight and am still trying to figure out the timing. I'll come back and edit when I get that figured out a little better... But here goes

Put your rice, water, tomatoes in your slow cooker. Turn on high. Cook for a couple of hours until rice is almost done.

Add in your beans, seasonings, and onions and peppers. I like to buy a mix of frozen chopped onion and peppers and just use about a cup and a half of that. It works for me and makes it super easy!

Turn on to low and let it do it's thing for a few more hours.

Serve topped with a little reduced fat cheese if you would like... some sour cream... or avocado... or all three!!! YUM!
