BROWN RICE PUDDING

Introduction

YUMMY DESERT TREAT WITHOUT THE GUILT YUMMY DESERT TREAT WITHOUT THE GUILT
Number of Servings: 6

Ingredients

    Egg, fresh, 2 large
    Cinnamon, ground, 1 tbsp
    Raisins, 0.50 cup, packed
    Granulated Sugar, 6 tsp
    Brown Rice, long grain, 2 cup
    Lactaid 2% Milk, 3 cup

Directions

Cook brown rice. Add cooked rice to milk and bring to a boil. Rice should have absorbed some of the milk. Beat eggs, cinnamon, and sugar in a bowl. Scoop some of the hot liquid from rice mixture and mix into the egg mixture and keep beating. Add raisins (optional) to rice mixture and stir. Slowly pour the egg mixture into the boiling rice and milk while stirring. Simmer for about a min. You can eat warm or cold. Add nutmeg for more kick if you like!
