16 oz chicken breasts(noSkin)
2 Tbsp cilantro, fresh
1" ginger root, peeled and sliced
1 med.shallot, peeled and sliced
2 garlic cloves, sliced
1/4 cup piri piri sauce or other hot pepper sauce
2 Tbsp Olive oil
2 Tbsp lemon juice
1tsp freshly ground bjack pepper
Finely chop cilantro,ginger,shallot and garlic in food processor.Add piri- piri sauce,2 Tbsp olive oil,lemon juice and pepper, process marinade to blend.
Pour 1/2 the marinade in glass dish add chicken breast and pour rest of marinade over chicken. Cover and chill for at least 4 hours.Turning chicken a few times.remove chicken from marinade and you can grill chicken in oven or fry on top of the stove or even on a grill.Cook until done.
